Dill Potato Salad. I made this with plain, lowfat yogurt instead of mayo. It was still super good.

This is my daily breakfast, 11-sies and brunch. 1/2 cup cottage cheese, a granola bar, veggie sticks, 2 tbs bleu cheese dressing, 16 crackers and cashews. I've since added 1/2 cup of plain, lowfat yogurt and a cup of mandarin oranges. The potatoes were something I thought I wanted that day. I didn't end up eating them. The little packet is some light water flavorant.

Turkey Wrap with roasted garlic cheese, sprouts, lettuce, tomato and a touch of light mayo on one of those low cal, whole grain wrap things. Bleu cheese dip and veggies and cottage cheese for sides.

A few more meals I needed to update..

Gemelli Pasta dish that I haven't named. It's so delicious, it's in my top 10 favorite meals. Let me know if you want the recipe. I might share it because I want everyone else to be overwhelmed by it's deliciosity. Add a grating of Parmesan and have a party in your mouth.

Green Salad to go with the pasta.

I make kim chee

Februar 17, 2008

Steps to making Kim Chee:

Cut and rinse NapaCabbage and salt liberally. Weight it down and wait three hours , minimum to release the water. Stir occasionally to ensure even salting.

Make the Pepper Seasoning.

Rinse and drain cabbage, making sure to squeeze out excess water. Stir together with sliced scallions, garlic and julienned ginger and pepper sauce.

Pack in containers and let ferment in a cool dark place for a few days and then put it in the fridge. Wait a few weeks and it's ready to go. hehe... I didn't tell you the pepper blend. You thought I was gonna reveal all my secrets?

Actual Tet Meal

February 07, 2008

It's customary to have a Buddhist Vegetarian meal on the first day of they new year, so I made vegan Pad Thai. It's rice noodles, fried tofu, red bell pepper and bean sprouts. There were several other dishes, but this is the only one I made.

Pan Fried Shanghai noodles.

Fried stuff: wontons, wrapped shrimp & chicken eggrolls

Those were part of the traditional new year foods we had, which also included a whole chicken, whole fish, wontons, and other stuff. They all represent stuff, like noodles for longevity, the egg rolls are in the shape of gold, whole fish means togetherness and so on...
